HULALÀ WHIPPED GRAN DESSERT

Ingredients

For the custard:

100 g Pristine Whipping 32%
150 g milk
70 g egg yolks
50 g caster sugar
Vanilla

For the meringue:

125 g egg white
163 g caster sugar
75 g icing sugar

For the fruit salad:

Hulalà Whipped Grand Dessert
1 orange
1 green apple
Strawberries
Raspberries
Blueberries
Currants
Mint

Hulalà Whipped Gran Dessert

Preparation

For the custard:

Heat the milk in a saucepan with the Pristine 32% Whipping Cream and the vanilla pod seeds. Separately, mix egg yolks and sugar. Pour the mixture into the saucepan and bring to 82°C, stirring continuously with a whisk.

For the meringue:

Mix the egg white with the sugar and bring everything to 60°C in the microwave.
Whisk in a stand food mixer at medium speed until it becomes firm.

For the fruit salad:

Clean all the fruit under running water. Peel the orange and cut it open. Cut the apple into long, thin slices, keeping the peel. Cut the strawberries into slices and distribute all the fruit on the plate. Separately, in a bowl, combine the custard with the same weight of meringue. Pour over the fruit on one side of the plate and flame with a blowtorch. Serve with fresh mint and sprigs of Hulalà Professional Gran Dessert.
