MANGO TAGLIATELLE WITH RASPBERRIES AND CREAM

Ingredients
- 1 mango
- 100 g raspberries
- q.s. Pristine Dairy Spray 33%
- a few curls of chocolate For the syrup
For the syrup
- 1 dl of water
- 50 g sugar
- 3 slices of ginger
- 1 sprig of mint
- 3 green peppercorns

Preparation of the syrup
Pour the water, sugar, ginger and green pepper into a saucepan. Bring gently to boil, cook for 1 - 2 minutes and let cool adding mint.
Preparation Mango’s Tagliatelle
lean the mango and cut it into thin slices with the help of a mandolin. Marinate them in the syrup for 15 minutes and then drain.
Decorations
Spread the mango's tagliatelle on a plate adding the raspberries. Garnish with chocolate curls and garnish with Pristine Dairy Spray 33%
