PIZZA WITH PUMPKIN, RADICCHIO AND GORGONZOLA

Recipe

  • 1 dough
  • 100 g pizza cooking cream
  • 120 g pumpkin pulp
  • 1 head of radicchio
  • 20 g white wine
  • 50 g gorgonzola
  • extra virgin olive oil
  • salt and pepper

  • 1,800-2 kg in flour
  • 10 g yeast
  • 20 g extra virgin olive oil
  • 45 g salt
  • 1 l of water

Divide the pumpkin into thin slices and brown them on both sides with a little oil, season with salt and pepper. Divide the radicchio into wedges, brown them with a little oil, sprinkle with white wine and let it evaporate completely, add salt. Roll out the dough in an even layer by pressing it with your hands and place it on top of a baking sheet brushed with oil, distribute over pizza cooking cream, gorgonzola divided into small pieces, radicchio and pumpkin; Drizzle with a little oil. Bake the pizza in a preheated oven at 250 degrees for about 15 minutes

Pour half a liter of water into a basin, add 700 g of flour, mix and add the yeast dissolved with 1 dl of warm water. Combine the dissolved salt with the remaining water and flour; Work until you get a smooth and elastic dough. Form dough loaves weighing about 180-200 g, cover them with a cloth and keep them at room temperature for 3-4 hours.
